Spicy peanut noodles
Spicy peanut noodles are an ideal summer dish served both chilled or warm. Add whatever seasonal vegetables you have on hand to complete the dish.

Spicy peanut noodles
  • 2teaspoons sesame oil
  • 3cloves garlicminced
  • 2inches gingerpeeled and grated on a microplane
  • 1 cup peanut buttercrunchy
  • 2cups water
  • 2tablespoons soy saucelow sodium
  • 1tablespoon Asian chile paste(or more to taste)
  • 1tablespoon brown sugar
  • kosher saltto taste
  • 12ounces spaghetticooked al dente
Optional vegetables and garnishes
  • 2 cucumbersgrated
  • 2 scallionsminced
  • 2 carrotsgrated
  • 6ounces baked tofusliced
  • 1 bell peppersliced into thin strips
  • cilantroas desired
  • sesame seedsas desired
  • peanutschopped
  1. In a saucepan, heat the sesame oil over medium heat, then add the garlic and ginger. Stir until soft and fragrant, about 1 minute.
  2. Add the peanut butter and water, and mix until incorporated. Add the soy sauce, chile paste, and brown sugar. Taste the sauce and add more chile paste, sugar, and salt to taste. Stir until the sauce has thickened, about 5 minutes.
  3. Toss the sauce with the spaghetti. Add any vegetables, tofu, and garnishes desired.
Recipe Notes

This dish is great when served immediately, or as leftovers. When eating as leftovers, it’s best to take it out of the refrigerator and let it come to room temperature before serving (~30 minutes).
