  • 3tablespoons ground flaxseedyou can grind it yourself in a blender/food processor or buy it pre-ground
  • 115-ounce can black beansdrained & rinsed
  • 1cup grated carrots~2 medium carrots
  • 1/3cup fresh cilantro or parsley (or both!)finely minced
  • 2cloves garlicfinely minced
  • 1/2cup red onionfinely minced
  • 1/2cup sunflower seeds
  • 3/4cup rolled oatsground into a flour
  • 1/2tablespoon olive oilextra-virgin
  • 1tablespoon soy sauce
  • 1teaspoon chili powder
  • 1teaspoon dried oregano
  • 1teaspoon ground cumin
  • 3/4teaspoon fine sea salt
  • freshly ground pepperto taste
  1. Preheat the oven to 350℉. Line a baking sheet with parchment paper and set aside.
  2. Mix the flaxseed with 1/3 cup of warm water in a small bowl, and set aside for 5-10 minutes. The mixture will thicken.
  3. Mash the black beans into a paste in a large bowl. Make sure to leave some black beans whole for texture. Add in the rest of the ingredients, including the flaxseed mixture. Mix well (I used my hands). Taste the mixture and adjust any seasonings to taste.
  4. With slightly wet hands, shape the mixture into 4-6 medium-sized patties (I took out the hamburger buns to see what size I should make the patties). I shaped the mix into a tight ball (this helps it stay together), placed it onto the prepared baking sheet, and then flattened it with my palm so it looked like a patty.
  5. Bake the patties for 15 minutes, carefully flip them, then bake for another 15-20 minutes, until the patties are golden-brown. Serve with toasted buns*, lettuce, tomatoes, red onions, avocado, and any other fixings you prefer!
Recipe Notes

You can multitask and toast buns at the same time you are baking the veggie burger patties! Place split hamburger buns (“inside”-side down) on the baking rack until lightly toasted, ~5 minutes in the 350℉ oven. Lightly wrap the toasted buns in a dish towel until ready to use, to prevent them from drying out.
