As a newish (mostly) vegan, I still struggle with what to eat for breakfast. Eggs are no longer my go-to breakfast, and while I love oatmeal, sometimes I crave something a little heartier. Enter… avocado toast! Both avocado and bread are vegan, and together, they make for an awesome combination. You can make this avocado toast recipe in 5 minutes or less, which makes it a perfect morning breakfast if you’re rushing out the door. (Ok ok, if you’re making fancy avocado rosettes, it may take just a little bit longer than 5 minutes… maybe 7 minutes. And if you choose to make the pesto sauce, add another 5 minutes. And if you’re making homemade bread like I did, well… that could take another day. ?)
Avocados and I have had a love-hate relationship for a long time. Until I was 15, I hated avocados. I thought the texture was slimy and gross, and didn’t care for the flavor. Luckily for me, taste buds change every 5-7 years, and when I tried avocado again one summer day, I became hooked for life!
I got into reading cookbooks that same summer, and one of the techniques I read about was how you can easily de-pit an avocado. It sounded pretty easy: hold half of an avocado in one hand, then with the other hand, take a chef’s knife, chop into the avocado pit, and twist it out. I could sense it — this was going to be the skill that elevated my kitchen game.
Unfortunately for me, I didn’t have a chef’s knife, so I grabbed a steak knife instead. Long story short, the steak knife didn’t just chop into the avocado pit — it also dug straight into my palm. Don’t repeat that at home, peeps. Rookie mistake.
Anyway, all of that is to say is that I’m still obsessed with avocados 6 stitches later. And here’s why: avocados are a vegan’s best friend. They go well with just about everything, and if dairy is no longer much of an option, they can help make something creamy — so creamy, that you may not even miss the milk.
